SEQUENTIAL TODDY TRAINING REVITALIZES TODDY TAPPING AND COCO SUGAR PROCESSING

Coconut farmers from the second batch witnessed the delicate process of coconut sap forming sugar.

 

WESTERN Visayas – ATI Region 6 conducted the "REGENERATE: Sequential Toddy Production and Coconut Sugar Processing Training," an initiative to enhance the skills and knowledge of local coconut farmers across the coconut sap value chain. The training was conducted in two batches, with the first session held from May 28-31, 2024, in the Province of Aklan, and the second from June 19-21, 2024, in the Province of Negros Occidental.

The training program brought together 58 coconut farmers, with 28 participants for the first batch and 30 participants in the second batch. The program's primary goal was to provide participants with knowledge and skills on the Sequential Toddy and Nut Production Technology (SCTNP) and techniques in coconut sugar processing. These two crucial areas can significantly boost the profitability and sustainability of coconut farming.

The REGENERATE training was designed to address the specific needs of coconut farmers. Participants were taught the methods of toddy production, which involves extracting sap from the coconut tree. This practice is traditionally used to produce coconut wine but is increasingly recognized for its potential in creating high-value coconut sugar.

Through hands-on sessions and expert-led discussions, farmers learned about the entire process of coconut sugar production, from sap collection and boiling to granulation and packaging. The training also emphasized quality control, marketing strategies, and sustainable practices, ensuring farmers can maximize their yields while preserving the environment.

Participants from both batches expressed gratitude for the opportunity to enhance their skills and explore new avenues for income generation. Many noted that the training had opened their eyes to the potential of coconut sugar as a viable and lucrative product. Several farmer associations plan to implement the techniques learned upon returning to their farms through their re-entry plans.

This training was implemented under the Coconut Farmers and Industry Development Program (CFIDP).
