BAYBAY CITY, LEYTE – The Agricultural Training Institute – Regional Training Center capacitated extension workers to effectively guide farmers to support the development of a thriving coconut vinegar industry in Samar, to contribute to the economic growth and sustainability of the region.
In the 3-day training, participants learned about the fermentation process of coconut vinegar using coconut water, processing coconut sap into vinegar, and discussing the essential quality control and safety measures in vinegar production; developed a business plan for coconut vinegar production, including marketing and sales strategies; and committed to sharing what they learned during the training with their respective communities.
Ms. Laiza V. Calagos, participants from LGU-Matuguinao, shared, “I wholeheartedly embraced the knowledge I gained from this training—from coconut sap harvesting, to the process of making coconut sap vinegar and coconut water vinegar, up to business plan preparation. I truly enjoyed the experience. The food was delicious, and the resource persons were both friendly and very knowledgeable. Although our group was not able to finish the business plan, I promise that once I return to our LGU, I will re-echo and share the learnings from this training.”

A total of 28 participants completed the training on Coconut Sap Production for Vinegar Making on August 27-29, 2025 at ATI-RTC 8, VSU Campus, Baybay City, Leyte.
