Meat Inspector Mastery: Ensuring Safe and Quality Meat for All

This training course aims to equip the local meat inspectors with technical expertise in the conduct of meat inspection, quality control, hygiene, and sanitation in meat establishments facilities and processes thus assuring that meat sold in the market is safe for human consumption.

Further, it also aims to equip them with sufficient knowledge of the various laws, rules, and regulations relative to meat inspection and hygiene, as well as the proper implementation of the same.

The training has two (2) phases wherein the Phase I was lecture-discussion qualifications, duties, and responsibilities of Meat Inspectors, various laws and issuances related to Meat Inspection, common diseases of poultry and livestock, Humane Handling and Humane Slaughtering Procedures of Food Animals, principles of Religious Slaughter, and basic principles of Hygiene and Sanitation among others.

Phase I was conducted from August 15-25, 2023, at ATI RTC MIMAROPA, Barcenaga, Naujan, Oriental Mindoro.

Dr. Armie Mariel Sebello, Resource Speaker from NMIS, used specimens during lectures on familiarization on the offal of hog, chicken, and goat as well as their functions.

Phase 1 Meat Inspection

Participants were given moving exams to test if they were already familiar with the different internal organs of hogs, chickens, and goats. They conducted a post-meat establishment inspection at Calapan City Public Market with the assistance of Dr. Jude Padasas, Dr. John Alvin Mecate & Mr. Michael Monterey, all from NMIS. Naujan Slaughterhouse was also visited for familiarization with the different equipment and the process of slaughtering pigs.

Moreso, Phase II or the practical application of Phase I component is being continued at ATI-Central Office with exposure to different meat establishments in NCR and Region 3.

Phase 2 Meat Inspection

Last August 28, 2023, the participants were able to visit RSRH Livestock Corporation at Marilao, Bulacan where they observed the humane cattle slaughtering. The group also visited the NorthStar Meat Merchant Inc. for their cold storage warehouse and meat cutting plant.

 The training activity runs from August 15- September 5, 2023, with 21 Agricultural Extension Worker participants.
