
The twenty-two (22) participants who completed the Training on Meat Processing with Good Manufacturing Practices (GMP) posed for a photo with Philippine Army officials led by LTC Emmerson Ian A. Borja (AGS) PA, and the ATI Bicol Management Team headed by Dr. Emmanuel L. Orogo.
NABUA, Camarines Sur- The Agricultural Training Institute – Regional Training Center V (ATI Bicol), in partnership with the Philippine Army 9th Infantry Division, conducted a three-day Training on Meat Processing with Good Manufacturing Practices (GMP) at Macagang Business Center, Nabua, Camarines Sur, last April 21-23, 2025. The training, held for 22 members of the Influenced Groups (IGs), aimed to strengthen the skills of swine raisers while offering sustainable livelihood opportunities.
The program began with welcome remarks from Engr. John Smith Arcilla, ATI Bicol Technical Staff, followed by opening messages from Ms. Ma. Techie M. Lizaso, OIC Section Chief of Career Development and Management Section, representing ATI Center Director Elsa A. Parot. Ms. Shena Naval, Development Management Officer I and Project Officer, gave the training overview. Ms. Anna Mae Gavarra, Instructor III of Central Bicol State University of Agriculture - Department of Food Science, led the first day’s session, which focused on GMP, proper meat handling, and identifying fresh meat cuts and their nutritional value.
On the second day, participants reviewed the previous lessons and shared their takeaways. Mr. Ken Jose L. Peñaserrada, Agriculture Technician I of Department of Agriculture- Regional Field Office V then discussed meat preservation techniques and led a hands-on demonstration on making longganisa, tocino, chicken nuggets, and siomai. Participants practiced processing the products in groups, applying what they learned.
The third day included group presentations, a session on labeling and packaging, and a continuation of the return demonstration with cooking and taste testing. Mr. Peñaserrada also discussed Return on Investment (ROI) to help participants set product prices. The training ended with a post-test, where participants showed improved scores. Groups then presented re-entry plans, which will be monitored for six months.
ATI Bicol Assistant Center Director Dr. Emmanuel L. Orogo, Ms. Lizaso, Lt. Col. Emmerson Ian A. Borja, and other Philippine Army officers attended the closing program. LTC Borja highlighted the value in building alternative livelihoods, while Dr. Orogo thanked the Philippine Army for their ongoing support and partnership. Certificates and post-training kits were also distributed to participants.
